Cupcake shop opens brick and mortar across from Pew Campus

Scrumptious Cupcakes and Sweetery has recently opened a retail storefront on the corner of Lake Michigan Drive and Seward Avenue across the street from Grand Valley State's Pew Campus on the West Side. Scrumptious has been open at the new location for the past month but has been operating out of the Downtown Market's incubator kitchen since becoming licensed at the beginning of the year. Prior to that, owner Betsy Denham had been baking gourmet cupcakes out of her home under the cottage food law. 

Scrumptious was initially an exclusively online business. After repeated requests as to where Scrumptious was located, Denham decided on a location that was part neighborhood and part downtown. Located in the same building as Grand Slam Subs, Scrumptious faces east where there is a view of the city skyline. To the west is residential. The facade will soon get a makover from a local artist and Kendall College Student. 

"We really want to be a part of this community. Yes, we're new to the neighborhood but we want to enrich this part of the neighborhood," says Denham. "I want people to be able to come anytime. Not to have to order a dozen cupcakes but to come up and get one or two." 

The menu consists of such delectables as lemon blueberry cornbread, rootbeer float with vanilla bean frosting, malt chocolate peanut butter ganache and almond raspberry cupcakes. They also sell ice cream cones, shakes, malts and bakery inspired sundaes like key lime pie and cinnamon roll. Dairy comes from Country Dairy out of New Era, Michigan.  

Denham participates with West Michigan Farmlink where she typically gets all her ingredients. She gets her eggs from Creswick Farms.

"Our focus is real local. We try to source locally whenever we can," says Denham. 

Denham has paired with Bloom Ferments to create a kombucha cupcake and would like to collaborate with other local food crafters in the future. Starting next week she will be selling cupcakes out of the newly established East Hills ice cream shop Furniture City Creamery.

With a commitment to quality, creativity and community, Denham offers other catering services for weddings, parties and events. Her services include a cupcake cocktail bar where she serves up prickly pear mojito, strawberry margarhita, pina colata and taquilla lime strawberry cupcakes.
