It’s that time of year again for Michigan grown blueberries which are now available at the Fulton Street Farmers Market! Blueberries are a very versatile fruit with many health benefits including being high in antioxidants and low in calories. Michigan blueberry season typically ranges between 4 to 6 weeks beginning now. Here is another great way to #BuildYourPlate with a Red White and Blueberry Salad recipe.
Red White and Blueberry Salad
1 basil leaf chopped
1/2 cup blueberries
6 cups spinach
3 oz mozzarella or feta chopped
1/4 cup almonds
1 heirloom tomato diced
1/3 cucumber chopped
For the dressing:
1/2 lemon squeezed
Drizzle of olive oil
Directions:
1. Layer salad ingredients beginning with greens in a bowl.
2. Mix 1/2 lemon juice and drizzle of olive oil in a small bowl and stir until combined.
3. Pour dressing onto salad.
4. Add pepper if you so desire and ENJOY!
