Those anticipating the opening of ELK Brewing at 700 Wealthy Street don't have to wait much longer. Owner and Business Manager Taylor Carroll says the construction is approximately 70% complete. The brewery plans to open its doors sometime in late December or early January.
In the coming weeks, ELK Brewing will be erecting a new storefront that will extend the building out an additional 10 feet. After that has been completed, they will begin installing the drywall and decorating.
ELK Brewing is thankful for the positive response they've received from the community.
"The community has been amazing to be a part of and has showed us nothing but support," Carroll says. "This has been a long process for us through private financing and construction, which has caused plenty of speculation about our opening. We have managed to stay positive and push through all of the hurdles we have encountered."
Community members who would like to help with the construction of ELK Brewing are in luck. Carroll and his partner Eric Karns, Owner and Head Brewer, are welcoming assistance in the construction process.
"We have a few projects that we could use a hand with coming up, and we feel the more the merrier. Plus," Carroll says, "a lot of people in the area would like to be able to say they had a hand in the construction of ELK."
Upon opening, ELK Brewing will feature what Carroll calls "the usual suspects" on tap: an IPA, Brown, Porter, ESB, Rye PA and a Scotch ale. As for their specialty and seasonal brews, Carroll says the city will have to wait and see what they have available once they open.
Their food will be provided by local restaurants, and their main supplier will be Jonny B'z Dogs and More.
